Existen procedimientos químicos y físicos para evitar la infección microbiana de los alimentos. Entre los químicos tenemos la adición de conservantes al alimento, que inhiben el desarrollo microbiano. Entre los fisicos tenemos el frio que tambien inhibe el desarrollo microbiano de una forma mas natural. De ahi la importancia de la cadena de frio en la distribucion y almacenamiento de los alimentos. Es preciso disponer de buenos equipos (frigorificos, congeladores, vitrinas, etc.). Tambien es muy importante el manejo higienico de los alimentos. Actualmente se desarrollan contratos de mantenimiento que, por lo general, se hacen por un año y permiten al empresario descargar las tareas dirigidas al riguroso mantenimiento y averias en favor del instalador frigorista. Un contrato de mantenimiento, no quiere decir que no se produzcan averias, pero estas disminuyen en un porcentaje muy alto. Siempre esto es mejor que decir yo llamo cuando se produzca la averia. Ocurre que cuando se producen las averias, (generalmente al principio del verano), tambien le ocurre a mas equipos y muebles frigorificos y se tarda en acudir para solucionar dicha averia, debido a la gran demanda de avisos por averias. Este libro sirve para tener un buen conocimiento sobre los fallos en compresores hermeticos instalados en infinidad de frigorificos electrodomesticos, botelleros, enfriadores de cerveza, en la hosteleria, vitrinas expositoras en tiendas, etc. Va dirigido, sobre todo, a reparadores de muebles frigorificos y electrodomesticos, a estudiantes de Formacion Profesional, fabricantes de electrodomesticos y muebles frigorificos en general y a todo tecnico relacionado con el sector. Se estudian compresores 220/240 50 Hz/60Hz. Tambien termostatos de servicio para instalar en los diversos muebles frigorificos (con distintos desescarches, con/sin señalizacion, regulador electronico, etc.). Se parte de la base que, en un principio, los muebles frigorificos estan bien fabricados y todos sus elementos en principio funcionan correctamente. Es un libro muy practico y sencillo para llevar un correcto mantenimiento en el frio y refrigeracion comercial.

This monograph and translation from the Russian describes in detail and comments on the fundamentals of metrology. The basic concepts of metrology, the principles of the International System of Units SI, the theory of measurement uncertainty, the new methodology of estimation of measurement accuracy on the basis of the uncertainty concept, as well as the methods for processing measurement results and estimating their uncertainty are discussed from the modern position. It is shown that the uncertainty concept is compatible with the classical theory of accuracy. The theory of random uncertainties is supplemented with their most general description on the basis of generalized normal distribution; the instrumental systematic errors are presented in connection with the methodology of normalization of the metrological characteristics of measuring instruments.
